Black Bean, Corn & Quinoa Salad 1.5 c quinoa cooked in 3 c broth Saute 1 red bell pepper, 1 jalapeno, 1 shallot, and 2 garlic cloves (all chopped) in 3 T oil; add 12 oz roasted corn, 15 oz cooked beans, salt, pepper, 1 t chili powder, 1/2 t cumin, 3 T cilantro leaves, & w T fresh lime juice.
